Agave Cilantro Dressing

When Laura and I were in Arizona this year, cousins Mary Ellen and Jack treated us like royalty.  Every day Mary Ellen had some special recipe that she made for us.  One evening we arrived, tired and worn out, to be welcomed by this amazing dressing over a simple green salad.
Since then, I have made it a number of times and everyone raves about it.


One of the ingredients is agave syrup.   I had never seen it before and made a special trip  to buy some to bring home.  It came in a double pack so Laura took one back to Germany with her. It turns out we also have it at the local Costco. Who knew?

It's a very sweet syrup so a little goes a long way. 

Agave Cilantro Dressing

1/3  cup    agave syrup
1/3  cup    rice wine vinegar
1/3  cup    lime juice
1/3 bunch fresh cilantro
1     tsp     garlic, crushed
dash of pepper to taste

Blend ingredients until smooth in food processor or with immersion blender. Enjoy.

  1. I used mine up quite a while ago. I can buy it here just about everywhere.
    I had to make up my own recipe. It includes Agave syrup, olive oil, water, salt pepper, lime juice, and chili pepper powder. I think it's about equal amounts syrup, oil, water, lime juice, and the others to taste, but I end up altering it so much as I try it that I'm not sure.
