Lime Mayo Sauce

   I made fish cakes the other day. I love fishcakes. I used to buy them, but they got really expensive. Then Laura told me about the fishcakes she makes in Germany. They are really good so I decided to copy-cat her.  I make mine with (leftover, boiled) potatoes and whatever fish happens to strike my fancy. They are scrumptious. Maybe one day I’ll post a recipe.
  When Justin and Krista came over to eat them with us, I wanted to jazz them up a bit. But what to do?
Tartar sauce is basically mayo and relish. Cocktail sauce is just mayo and ketchup. So while I didn’t necessarily believe it would work, I mixed some mayo and lime juice together. Why not?
It was rather spur of the moment, so I only have a picture of the aftermath. But this sauce was  so good. Unexpectedly good. I'd recommend trying it.

Just mix together:


1/2 cup mayonnaise
juice of one lime
zest of one lime
tsp of crushed garlic
salt, if you want.

Paul calls it lime aioli. And if you made your own mayo/aioli from scratch, I’ll bet it would be to-die-for.
