Beans - Quick Soak Method


I'm making bean and beef soup tonight and once again I have forgotten to plan ahead. Dang.
I know that you are supposed to soak beans overnight, but I never remember far enough in advance. Lucky for me, there is a way to quick-soak them.

Quick Soak Beans

Combine one cup of beans with 3 cups of water. 
Bring to a boil and continue boiling for 3 minutes.
Cover and turn off heat.
Let soak for 1 hour. Drain and rinse.
Use as instructed in recipe.


Beans are so economical this way.
