Oatmeal Pecan Pancakes



Paul came home from one of his trips raving about the pecan pancakes he had eaten while he was away.  Honestly? I would never have thought to put nuts in pancakes. But I think you'll agree that these are pretty darn tasty. 

1-1/2 cups old-fashioned oatmeal
1-1/2 cups whole wheat flour
2 tsps baking soda
1 tsp baking powder
1/2 tsp salt
1-1/2 cups buttermilk
1 cup milk
1/4 cup oil
1 egg
1/3 cup sugar
3 tbsp chopped walnuts

Blend the dry ingredients in large bowl.

Mix together wet ingredients.

Pour wet mixture into dry mixture.  Stir. (It should be a little lumpy - not too smooth.)

Heat griddle to 325-350º. Spoon batter onto griddle.
 

Cook until underside is golden and bubbles break on top. (As the pancakes cook, little bubbles will form. When the pancake is cooked properly, the little bubbles will pop and the outside edges of the pancake will lose their sheen.)

Flip and cook for 1 to 2 minutes or until the other side is golden.
