Hot Apple Cider


The aroma from a pot of this cider simmering on the stove means Christmas is not far off. I make a pot of it and then keep a jug of what's left in the fridge.  Then in the evenings I can warm up a steaming mug with little fuss. It's the perfect beverage to sip while sitting next to the twinkling Christmas tree,  legs curled under me and a good book in my lap.

I often prepare  a couple of batches of the spices at once, wrapping the spices in cheesecloth, so I have them on hand to easily steep another pot, or give away as gifts.  It's super easy to make, and super yummy to sip.


Hot Apple Cider
2 cups water
1 tbsp grated orange peel
3 sticks cinnamon
2 tsp whole cloves
1 tsp whole allspice
1 tsp coriander seeds
1/2 tsp ground nutmeg
 

2 quarts apple cider or apple juice
1/2 cup orange juice
3 tbsp lemon juice
 

1 cup light rum (optional)

Garnish:
  • cinnamon sticks
  • slivered orange peel
  • slivered lemon peel
1. Heat water, sugar, orange peel, cinnamon sticks, cloves, allspice, coriander, and
nutmeg in a 2 quart saucepan over medium heat to boiling.
2. Reduce heat. Simmer, covered for 20 minutes.


3. Pour through strainer lined with cheesecloth


3. Place liquid in dutch oven or large pot.
4. Add apple juice, orange juice, lemon juice and rum, if using.
5. Heat until hot.
6. Serve with garnish.

*Alternatively, put all spices in a square of cheesecloth and tie with kitchen
string. Then instead of straining, just lift out the bag.
