Bread Crumbs in a Jiffy

When a recipe calls for bread crumbs, I'm always a bit leery. I don't use them that often and invariable when I finally open the jar of crumbs, out wafts that rancid smell that tells you there will be no bread crumbs in today's recipe.
Even the cause of the smell - butyric acid - sounds bad. 
Lucky for me, and now possibly you, I found a quick way to whip up some bread crumbs with that last heel of bread sitting in the freezer.
For the pictures here, I used an English muffin that had seen better days.

I don't have exact amounts, but I started with this:
  • 1 slice of bread (I had 1-1/2 English muffins)
  • 1 clove garlic, crushed
  • 1-2 Tbsp butter or olive oil
  1. Tear the bread into small pieces and process into crumbs in food processor.
  2. Saute the garlic in butter for a minute.
  3. Add in the bread crumbs and cook over medium heat
  4. Stir occasionally, taking care not to burn.
If you are cooking in a cast iron pan, remove from pan so it doesn't continue to cook and burn.

Voila! Instant crumbs. 
Whatever bread you have on hand

Tear bread into pieces

Process into crumbs

Butter and garlic. Perfect.

Cook the garlic for a minute or so

Add the crumbs

Keep an eye on it. Stir occasionally to make sure it doesn't burn.

I put it on Mac 'n Cheese with some oven dried tomatoes.
