When a recipe calls for bread crumbs, I'm always a bit leery. I don't use them that often and invariable when I finally open the jar of crumbs, out wafts that rancid smell that tells you there will be no bread crumbs in today's recipe.
Even the cause of the smell -
butyric acid - sounds bad.
Lucky for me, and now possibly you, I found a quick way to whip up some bread crumbs with that last heel of bread sitting in the freezer.
For the pictures here, I used an English muffin that had seen better days.
I don't have exact amounts, but I started with this:
- 1 slice of bread (I had 1-1/2 English muffins)
- 1 clove garlic, crushed
- 1-2 Tbsp butter or olive oil
- Tear the bread into small pieces and process into crumbs in food processor.
- Saute the garlic in butter for a minute.
- Add in the bread crumbs and cook over medium heat
- Stir occasionally, taking care not to burn.
If you are cooking in a cast iron pan, remove from pan so it doesn't continue to cook and burn.
Voila! Instant crumbs.
