Skor Cake


Need a birthday cake in a hurry? Here's the answer - Score with Skor cake. (sorry, couldn't help it)

We first had this at Christie's wedding. It was so yummy and we have since adapted it to suit the occasion.

On my  birthday this year, we were on the beach at Point Roberts. Uncle Victor has a beautiful kitchen there with a brand new stove. The challenge is to find a) the tools for baking and b) the inclination to come in from the beach to do the baking.

I usually use Cammi's blackout cake recipe for this but there is cheat for when you are in a pinch or at Point Bob - ask my good friend Betty to help. Betty Crocker never lets me down with her  excellent supermoist dark chocolate cake mix. I brought along a jar of oil, 3 eggs and a cake pan to "camp". 

When we ate the cake, Gjoa complimented me on my light and moist cake. I told her that Betty helped and she couldn't believe it. I wouldn't say she was devastated but . . .  She has learned a lot about me this year - that I went with her to Sunday school (how did she not notice me in the car all those years?), that I can swim, and that I'm not afraid to use a cake mix. (Don't worry, sis, I'll make a "real cake" for your birthday.)

Whichever way you choose to go - this cake will be the star of the event.

Skor Cake

Bake a cake.
Split the cake into two layers.
Whip the cream. (1 pint or 1/2 litre - or more)
Smash the Skor bars in their wrappers (2-4 bars should do it)
Spread whipped cream and sprinkle Skor pieces in the middle of the cake and on top.
Enjoy.
Borrowed a whipper from Pt. Bob neighbour Bob.

Always handy to have a teenaged boy to smack the Skor bars to the right sized pieces.

Consulting: Is the cream thick enough yet?

In this case we didn't split the cake and put cream in the middle: Just piled it on top!

You don't necessarily have to wear nail polish to match the Skor wrappers but it's a nice touch.

We needed a lot of candles for this particular cake.
