For some reason today, both Krista and Justin thought I was going to bake cookies. I wasn't. But then, like a song that gets stuck in your head, all I could think about was cookies. I had to do something about that, so I made these cookies.
I love drop cookies for their simplicity. Mix some stuff in a bowl. Drop it off a spoon. In 5 minutes, you've got cookies ready to go in the oven
I like to kid myself that cookies made with whole wheat flour are good for you. If you don't have whole wheat flour, just use all white flour.
As for the fruit, nuts and chips - mix it up with whatever is on hand. The reason there's half a cup of chocolate chips in this recipe is because that's all I had.
Fruit and Nut Cookies
2/3 cup brown sugar
1/3 cup butter or margarine
1 egg
1/3 cup corn syrup
1 tsp vanilla
2 tbsp orange juice
1 cup flour
3/4 cup whole wheat flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup raisins (or other dried fruit)
1/2 cup chocolate chips
1 cup walnuts
Beat brown sugar and butter until mixed.
Beat in egg, corn syrup, vanilla, and orange juice until fluffy.
Add flour, baking powder and spices and mix well.
Stir in nuts, chips and fruit until combined.
Drop by tablespoonfuls onto lightly greased cookie sheet.
Bake 350ยบ for 10 minutes or until golden.
