Yorkshire Pudding - variation on a theme

Most people get songs stuck in their heads. Me, I get food stuck there. A couple of weeks ago, I was at Elaine's and she was having dinner. Specifically, she was shamelessly raving about her Yorkshire pudding. Yes, our lass who was born and bred in Yorkshire, was eating President's Choice frozen Yorkshire puddings imported direct from Yorkshire. What?

Since then, I've been turning over in my mind, how easy it is to make Yorkshire pudding and honestly, I'd rather throw some eggs, milk and flour into a blender than go to the Superstore. [In fact I'd pretty much rather poke myself in the eye with a fork than go to the Superstore, but that's a different blog post.]
Fast forward to last night. I was staring at a leftover hunk of roast and was just not inspired to make shepherd's pie. That's when I got this idea.

  • Mince the beef in the food processor. 
  • Fry up some onions and mushrooms. 
  • Mix the beef, onions, leftover peas and mashed potatoes into a sort of hash. Stir in a couple of tablespoons of gravy. Season with salt, pepper, garlic, maybe even rosemary.
  • Put butter in the bottom of the pie plate or casserole dish and heat it in a 425º oven until the dish is hot.
  • Pull the hot dish out of the oven.
  • Pour the Yorkshire pudding batter into the dish.
  • Spoon the hash mixture into the centre of the dish.  *Leave space at the edges for the pudding to puff up.
  • Bake at 425º for about 25 minutes. 
Don't open the oven while it's cooking, but keep an eye on it through the window.
Piping hot and nay bad.

How easy is it to make the pudding batter? You tell me.

Yorkshire Pudding
 

2 eggs
1 cup milk
1 cup flour

Beat eggs, add milk, add flour. (You can do this in a food processor)
Beat very well until frothy and bubbly.
Cool in fridge if there's time.

Follow instructions above.

The Mr. spooned leftover hot gravy over his.  I had mine with Worcestershire sauce.

If you want to make traditional puddings:

Line muffin tin with either a little fat from the roast or butter or oil. Heat in oven
until almost smoking.
Pour in batter.
Bake @ 400° for 20 minutes then reduce heat to 200° and bake until crisp.
Don’t open oven.
