Since then, I've been turning over in my mind, how easy it is to make Yorkshire pudding and honestly, I'd rather throw some eggs, milk and flour into a blender than go to the Superstore. [In fact I'd pretty much rather poke myself in the eye with a fork than go to the Superstore, but that's a different blog post.]
Fast forward to last night. I was staring at a leftover hunk of roast and was just not inspired to make shepherd's pie. That's when I got this idea.
- Mince the beef in the food processor.
- Fry up some onions and mushrooms.
- Mix the beef, onions, leftover peas and mashed potatoes into a sort of hash. Stir in a couple of tablespoons of gravy. Season with salt, pepper, garlic, maybe even rosemary.
- Put butter in the bottom of the pie plate or casserole dish and heat it in a 425º oven until the dish is hot.
- Pull the hot dish out of the oven.
- Pour the Yorkshire pudding batter into the dish.
- Spoon the hash mixture into the centre of the dish. *Leave space at the edges for the pudding to puff up.
- Bake at 425º for about 25 minutes.
Piping hot and nay bad.
How easy is it to make the pudding batter? You tell me.
Yorkshire Pudding
2 eggs
1 cup milk
1 cup flour
Beat eggs, add milk, add flour. (You can do this in a food processor)
Beat very well until frothy and bubbly.
Cool in fridge if there's time.
Follow instructions above.

If you want to make traditional puddings:
Line muffin tin with either a little fat from the roast or butter or oil. Heat in oven
until almost smoking.
Pour in batter.
Bake @ 400° for 20 minutes then reduce heat to 200° and bake until crisp.
Don’t open oven.
Makes 12.
