Grilled Caesar Salad

 
On our visit to see cousin Janet's gallery in Cochrane, we stopped for lunch at a cool bistro called Olive 'R Twist. Trekker and I had corn chowder with smoked salmon. Sounds weird but tastes delicious. We also had Caesar salad with grilled romaine lettuce. It was so good we decided to make it tonight to go with the blue cheese burgers and Guinness. It was a very good choice. 
Tatum had prepared the dressing in advance. Janet omits the egg in the dressing so it's a tasty vinaigrette. We drizzled it over the lettuce and threw it on the BBQ. The result was a really interesting smoky flavour. Grilling the lettuce gives it a great texture. 
Then we topped it with Parmesan cheese. So good.

Grilled Caesar Salad
3 heads romaine lettuce
Caesar dressing (from a bottle or 1/2 c olive oil, juice of one lemon, 1 tsp. Worcestershire sauce, 1 tsp. Dijon mustard, 1 clove crushed garlic)
Parmesan cheese
Croutons 

Trim 1/4 inch off ends off lettuce 
Wash lettuce and slice lengthwise to make boat shapes.
Drizzle dressing over lettuce boats. Turn boats over and drizzle over other side.
Grill on BBQ for 1-2 minutes.
Flip and grill other side for another 1-2 minutes.
Place on plate and top with freshly shaved Parmesan and a few croutons. 

Trim lettuce and drizzle with dressing.
Flip and drizzle other side with with dressing.
Grill for 1-2 minutes.
Flip and grill another 1-2 minutes.
Sprinkle with Parmesan and croutons.
If there's any extra dressing drizzle another tsp over each serving.a
